Clean Tonka Old Fashioned
The perfect after dinner cocktail? Maybe. This rich, decadent and smooth drink is great for sipping on, reclined in your favourite chair, late in the evening. The spicy notes of the CleanRum lend themselves perfectly to the vanilla and cinnamon profile of the Tonka Bean.
- 60 ml CleanRum
- 20 ml Tonka Bean Syrup
- 3 Dashes Aromatic Bitters*
- Garnish; Orange Peel
- Grated Tonka Bean
* Aromatic Bitters; are a common cocktail ingredient and come in many forms, the most popular and well known is Angostura Bitters, which is what we have used here. It is bottled at 40% ABV however most recipes only call for a few dashes so it has a negligible effect on alcohol content of the overall drink (similarly to CleanRum itself). However there are non-alcoholic bitter options available on the market, but are a little more difficult to find.
A Tonka Bean is the seed of the Cumaru Tree native to South America, it is flat and wrinkled, resembling a large elongated raisin, yet hard like an almond. It’s mystical aroma of vanilla, cinnamon, cloves and a hint of freshly mown grass has made it a secret weapon in Michelin star restaurants, despite it being outlawed in the USA. It can be found very easily online (outside of the USA).
To make Tonka Bean syrup, ground 20 beans with a pestle and mortar, add to a saucepan with 120 ml water and 120g sugar and gently simmer for 10 minutes, stirring occasionally. Remove from heat and let cool on the side for 4 hours. Pass through a fine mesh sieve and muslin cloth to remove the beans. Store in an airtight sterile bottle for up to two weeks.
Stir all ingredients over ice and strain into an Old Fashioned glass with a large ice cube. Express the orange peel over the glass and place in the drink, then finely grate a tonka bean over the glass to garnish.
