About this cocktail
The Ginger Mojito is a bold twist on the classic Cuban cocktail, infusing the familiar refreshment of mint and lime with the spicy kick of ginger. This flavourful variation balances sweet, citrusy brightness with a subtle heat, making it a go-to option for those looking to elevate their mojito experience.
Whether made with fresh ginger, ginger ale, or ginger syrup, this cocktail adds complexity and warmth while staying crisp and incredibly drinkable—perfect for summer afternoons or evening gatherings.
To make a Ginger Mojito, muddle fresh mint leaves and lime juice with a hint of sugar, then add white rum or Clean R and your preferred ginger element. Top with ice and soda water (or ginger beer for more bite), and garnish with mint sprigs or a lime wedge. The result is a sparkling, spicy refresher that’s both cooling and invigorating.

Ingredients for 1 person
Top tip: Gently muddle the mint leaves using a muddler or the back of a spoon to release their aroma and oils
Method
Step 1
Prepare the Glass: Take a highball glass and add the light muscovado sugar and caster sugar. Pour in the lime juice and gently mix until the sugars dissolve.
Step 2
Add Mint Leaves: Place 6-8 fresh mint leaves into the glass. Gently muddle the mint leaves using a muddler or the back of a spoon to release their aroma and oils. Be careful not to tear the leaves too much.
Step 3
Add Clean R: Pour in 50ml of Clean R and give it a gentle stir to mix.
Step 4
Add Ice: Fill the glass with crushed ice, almost to the top.
Step 5
Top with Ginger Ale: Add a splash of ginger ale to top off the drink, giving it a festive, warming twist.
Step 6
Garnish: Garnish with a sprig of mint. For an extra wintery touch, dust the mint with a bit of icing sugar to mimic snow.
Step 7
Serve and Enjoy: Insert a straw and serve immediately.
