To make a Ginger Mojito, muddle fresh mint leaves and lime juice with a hint of sugar, then add white rum or Clean R and your preferred ginger element. Top with ice and soda water (or ginger beer for more bite), and garnish with mint sprigs or a lime wedge. The result is a sparkling, spicy refresher that’s both cooling and invigorating.

Top tip: Gently muddle the mint leaves using a muddler or the back of a spoon to release their aroma and oils
Prepare the Glass: Take a highball glass and add the light muscovado sugar and caster sugar. Pour in the lime juice and gently mix until the sugars dissolve.
Add Mint Leaves: Place 6-8 fresh mint leaves into the glass. Gently muddle the mint leaves using a muddler or the back of a spoon to release their aroma and oils. Be careful not to tear the leaves too much.
Add Clean R: Pour in 50ml of Clean R and give it a gentle stir to mix.
Add Ice: Fill the glass with crushed ice, almost to the top.
Top with Ginger Ale: Add a splash of ginger ale to top off the drink, giving it a festive, warming twist.
Garnish: Garnish with a sprig of mint. For an extra wintery touch, dust the mint with a bit of icing sugar to mimic snow.
Serve and Enjoy: Insert a straw and serve immediately.
